This is an
excellent appetizer, and also a good topping for sushi. The delicate
salty taste of salmon roe is preserved by marinating in our dashi jiru
sauce.

Put all the Recipe's
condiments into a
saucepan and mix well.
Bring it to a boil over high flame. |

As soon as it boils, turn down the flame
to medium for 30 seconds.
Then turn off the fire. |

Remove pan from the stove. Leave sauce
until cool. To speed cooling, you can float the saucepan in a large bowl
of ice water. Cover and refrigerate. |

Put salmon roe into chilled dashi jiru
sauce.
Marinate in the refrigerator overnight. |
|
Remove roe from the dashu jiru sauce.
Traditionally, this is served in a small bowl and eaten with tiny spoon. |
